Lucy’s flapjacks

imagesThis is my mother’s 1960s recipe which I use all the time, they are simple  and really delicious. Good to take on a holiday picnic. You’ll need:

210g butter
175g caster or soft brown sugar
6 tsps golden syrup
500g rolled oats 

 I usually double these amounts because they don’t last long …

* Preheat oven to 200C. Put butter, sugar and syrup in heavy-based saucepan, heat until the butter has melted then add oats. Mix well.

* Tip mix into 30 x 20cm shallow baking tin and cook for around 15mins until golden. Cool a little before cutting into equal pieces. Enjoy.
