Delicious flourless chocolate cake

Unknown-10Chocolate Cake (with no butter) from French Frances


125g Good dark chocolate

125g Ground almonds

150g Castor  sugar ( I often put about 135g and it’s fine)

4 eggs


Beat eggs and sugar until pale and fluffy

Melt the chocolate in a bain marie and add to the egg and sugar

mix.  Stir until consistency resembles chocolate mousse.

Gently fold in the ground almonds and pour the mixture into a lined, greased cake tin or pyrex mould.

Bake at 180deg for approx. 20 mins. The centre should be slightly soft.
