Summer in the city means only one thing to foodies: salads are top of the menu. I popped by husband and wife team Alan and Lyn’s Fruit and Vegetable stall at 53 Portobello Market (on the corner of Colville and Elgin Crescent) to get some fresh ideas. This family-run stall has been a stalwart of the market for almost 40 years and is open from 7am every day (apart from Sundays. Alan says that this is so he can go to church, to which Lyn rolled her eyes).
Here is Alan’s summery salad idea:
Mango, Feta and Avocado Salad.
Scavenge the Portobello for the following:
2 large ripe mangoes
7 oz feta cheese
1 ripe avocado
1 bag of mixed leaves or rocket
Salt and freshly ground black pepper
A drizzle of extra virgin olive oil
Put the mixed leaves or rocket into a serving bowl.
Cut the two mangoes in half and then run the knife through the flesh close to the skin to peel it, as you would with a melon. Dice the flesh into bite-size pieces. Crumble the feta cheese over. Cut the avocado in half and discard the stone. Then carefully peel away the skin and slice or dice up the avocado and add to the mixed leaves or rocket. Season with salt and pepper, drizzle with oil and finish by squeezing the lime juice over the salad. Return to Portobello the next day and thank Alan.
